Shop-bought BBQ sauces are often filled with sugar and thickeners like wheat. This is a very easy home-made one. ⠀
So easy that, as I had nearly all the ingredients anyway, I managed to whip it up in minutes last night when my son Josh asked for a bbq marinade. As he was planning to bbq the chicken himself, so taking over the main work of making supper, I was happy to oblige! ⠀
Ginger is a great anti inflammatory with lots of other health benefits but many children don’t like it so this is a great way of getting it into their diet. ⠀
Marinade Ingredients
-
150g tomato pureé⠀
-
4 tablespoons apple cider vinegar⠀
-
4 tablespoons apple juice or water ⠀
-
2 dates ⠀
-
2 tablespoons coconut aminos or Tamari
-
2 teaspoons fish sauce⠀
-
1 teaspoon sea salt⠀
-
1/2 teaspoon black pepper, freshly ground ⠀
-
1 teaspoon sweet paprika powder ⠀
-
1 teaspoon Chipotle chilli powder⠀
-
1 teaspoon Dijon mustard⠀
-
2 garlic cloves, crushed⠀
-
1 inch piece chopped fresh ginger ⠀
-
1 lime, juice ⠀
Method
-
Put all the ingredients in a blender until well combined. Add water if too thick. ⠀
-
Use the marinade for chicken pieces or other meat. Here I used boneless, skin-on chicken thighs. Marinade overnight or for at least an hour.⠀
-
We then put this on bbq for about 15 mins and served with homemade coleslaw.
