A great dairy-free alternative to the classic. A powerful blender like a Vitamix will be needed or use a Nutri Bullet and blend in batches. ⠀
The great thing about this sauce is that it uses store cupboard ingredients. I think it’s a good idea to stock up in nuts like cashews to makes a savoury sauce like this, a sweet cashew cream to go with a pudding or to make cashew nut milk. ⠀
INGREDIENTS
-
250g cashew nuts, soaked for at least 4 hours then rinsed.⠀
-
250ml boiling water ⠀
-
2 tablespoons nutritional yeast ⠀
-
1 tablespoon white or Chickpea miso (optional)⠀
-
1 tsp lemon juice⠀
-
Pinch of salt ⠀
-
1 tablespoon olive oil or macadamia nut oil ⠀
-
2 whole cauliflowers, cut into florets ⠀
METHOD ⠀
-
Steam the cauliflower until just tender but still with a bite. Place in an oven dish.⠀
-
Place all the other ingredients in a powerful blender (I use my Vitamix). Blend for 2 minutes using the tamper if needed. ⠀

Pour onto the cauliflower. ⠀
-
Either serve straight away or place under a pre-heated grill to brown. ⠀
